Baklava with honey and walnuts

Absolutely crispy and juicy without sugar


  1. Preheat the oven to 160 Celcius.

  2. Mix the sesame seeds in a bowl with the walnut and cinnamon

  3. We count the sheets and separate them. Half for the base and half for the top.

  4. Grease a tray and spread half the sheets on the bottom, one by one, to have air between them.

  5. Spread the filling to go everywhere and cover with the remaining sheets, again one by one.

  6. Carefully cut them into pieces that you want. Squares, diamonds, triangles.

  7. Put the oil in a saucepan and heat it well, almost to burn. Pour over this filo sheets which will cook them slightly.

  8. Bake at 160 degrees Celsius for about 1 hour, until well browned.

  9. Remove it from the oven and pour the honey between the cuts we made with the knife while it is still hot.

  10. Allow the honey to cool and absorb well.


500 grams filo pastry (for baklava)

450 grams coarsely grated walnuts

2 tablespoon sesame seeds

1 tablespoon cinnamon

1/4 teaspoon ground cloves

250 ml olive oil

400 grams of thyme honey or other
