I have never eaten such a delicious beef soup
Add the olive oil to a large pot and after it heats up, sauté the meat in portions after you have first wiped it and dried it well.
Add the wine on the last pieces, then add back the remaining pieces of the meat and cover them with boiling water.
Simmer on their own until the meat comes off the bones (about 1 hour and 10 minutes). With closed lid and skimming in between.
Prepare the vegetables by cleaning them and after you chop them coarsely, add them to the meat. Simmer for at least 30-35 minutes until the vegetables get the desired texture.
At the end taste it and adjust the seasoning and the lemon juice.
Separate the marrow and meat from the bones and discard the bones.
Serve with plenty of freshly ground pepper, a little more lemon and sprinkle with a little parsley.
1,500 grams of beef leg slices (osso buco)
800 grams of oxtail
500 grams of celery
4-5 medium-sized potatoes
4 dry onions
5-6 sliced carrots
1 parsley root (optional)
100 ml dry white wine
100 ml olive oil
Juice and zest of 1 lemon
