Cod on a bed of onions and garlic dip

Traditional recipe from Greece

  Method  

  1. Cut and desalt the cured cod.

  2. Preheat the oven at 180 Celsius without the fan

  3. In a tray, place a very thick layer of chopped onions in thick strips, on top plenty of garlic cut into slices, season with salt and pepper, drizzle with olive oil, add the bay leaves and mix.

  4. Place in the oven until lightly browned and half-cooked.

  5. Soak the stale bread in water.

  6. Make the paste for the coating with all the ingredients of the third layer in the mortar.

  7. Squeeze the bread crumb very well and add it in the paste, then add vinegar and olive oil. Mix it well.

  8. On top of the cooked onions, place the floured cod and bake it until it gets color. Turn the pieces of cod so it gets color on the other side as well.

  9. Place the paste / garlic on top and bake until it turns brown

  10. Let it rest for a bit before you cut it.

  Ingredients  

I used a 32 cm Ø baking pan


For the first layer

1,300 grams peeled onions

40 grams garlic, thinly sliced

70 ml olive oil

 4 bay leaves

salt and pepper


Second layer

1750 grams of salted cod

flour for flouring

black pepper


Third layer

750 grams breadcrumbs or stale bread 1-2 days old

60 grams garlic, mashed

100 ml olive oil

 90 ml vinegar

1½ tablespoon tomato paste

salt and pepper
