Sensational made with Myzithra cheese from Vitina
Method
1. Turn on the oven at 180 degrees Celsius.
2. Grate the zucchini and add the breadcrumbs, eggs, chopped onion, parsley, mint and mizithra.
3. Add oil, salt, pepper and oregano.
4. Knead, gradually adding the flour.
5. Arrange the fritters in a pan on a greased baking sheet and sprinkle with breadcrumbs.
6. Bake for 30 minutes
Ingredients
For the Courgette mixture
900 g courgettes
130 g grated Parmesan cheese
3 eggs
400 g flour
150 g breadcrumbs
2 spring onions, finely chopped
3 TBSP. chopped mint
2 TBSP. chopped parsley
a little olive oil
Salt, pepper, oregano
YOGURT SAUCE
300 g Greek yogurt
100 g feta cheese
1/2 cucumber
1 clove of garlic
Mint finely chopped
Juice of half a lemon
a little olive oil
Salt
pepper
