This is my interpretation of an Italian classic
Method
In a bowl place the flour, yeast , salt and mix. Add the water and oil, stir, cover and let it double in volume.
Cut the herbs.
Finely chop the onion and pepper, mash the garlic and put it in a little oil.
Add all the ingredients to the dough and knead.
Empty the dough into the pan , grease your hands with the oil and garlic and spread the dough in the baking tray
Leave it covered to rest for 20 minutes
Bake on the second shelf from below for about 35 minutes, taking out 5 minutes before the baking is over and spread with garlic oil.
Ingredients
500 gr plain flour
375 gr luke warm water
3 gr dry yeast or 9 gr fresh yeast
8 gr salt
2 table spoons olive oil
4-5 spring onions
100 Greek olives pitted
half a pepper
1 table spoon fresh oregano or a teaspoon dried
1 table spoon fresh thyme or 1.5 teaspoon dried
1 table spoon fresh mint or 1.5 teaspoon dried
2 cloves garlic with some olive oil for the topping
