Homemade pie with feta cheese

Let's make it together

  Method  

  1. Put the salt, vinegar and olive oil in warm water.

  2. Add the flour progressively and mix until it is incorporated.

  3. On a floured surface, knead the dough for at least 5 minutes and, cover with cling film, let it rest for at least half an hour

  4. Place the eggs and black pepper in a bowl and beat with a wire whisk.

  5. Add the yogurt, the crumbled feta and some of the brine.

  6. Mix and set aside.

  7. Sprinkle corn flour on your work surface and place the dough on it.

  8. Roll it into a stick and divide it into 16 even balls.

  9. Spread half the sheets to about 20 cm diameter, sprinkle them with corn flour and generously brush them with butter.

  10. Place the sheets on top of each other with both sides buttered except for the top and bottom ends and set aside.

  11. Prehear the oven at 180 degrees Celsius.

  12. Repeat the same process with the rest of the balls.

  13. Spread the bottom sheet with the rolling pin.

  14. Spread it in a 40 cm pan and butter it well

  15. Put the filling on top

  16. Cover with the top sheet and brush with butter.

  17. Fold the edges and brush them with butter.

  18. Score the pieces

  19. Bake it for about 1 hour.

  Ingredients  

For the dough

700 g of hard bread flour or plain flour

320 ml warm water

90 ml olive oil

2 tbsp vinegar (16 ml)

1 tsp salt (6 g)

250 g of melted butter

Corn flour for spreading the pastry


For the Filling

500 g of feta cheese

5 eggs

400 g of strained Greek yogurt

40-50 ml of milk or brine from the feta

Freshly ground black pepper
