A traditional recipe from Cyprus
Method
Place all the ingredients for the marinate in a pan and mix
Add the meat mix it well and leave it overnight in the fridge
Preheat the oven at 165 degrees Celsius without the fan
Peel potatoes, onions and carrots and cut them into large pieces
In a pan, place two large sheets of baking paper
Put the vegetables on the baking sheet and season with salt
Add the marinated meat together with the marinate, the bay leaves and wrap it well with the baking paper so that the juices can not escape
Bake for 3 hours, remove from the oven and increase the tremperature to 200 Celsicus with the air on
Open the obaking paper, remove the bay leaves and place in the oven for about 15 to 20 minutes until it turns brown.

900 g boneless leg of hogget or lamb
4 large potatoes (1 kg)
2 large carrots
1 large onion
3 tbsp olive oil
2 large lemons, juice and zest
1,5 tsp dried oregano
2 sprigs rosemary, finely chopped (1 tablespoon)
4 cloves of garlic
17 g salt
2 g black pepper
2 bay leaves
1 tsp. crushed chili pepper (optional)
salt and pepper
Sheep milk yogurt to serve
