A very special Festive meze
Clean the intestines very well by passing water through them until the water comes out clean.
Wash the liver well and cut it into pieces
Season with salt and pepper and add oregano to the meat and stir.
Divide the meat by type and skewer alternately until all the pieces are inserted.
Pass the graft and with the smaller intestines, stabilize the graft as much as possible.
Wrap the longest intestines diagonally without tightening them.
Bake on the coals for about two hours and a quarter.
Add extra salt, pepper and oregano
