An old recipe from Ekaterina “Aunt Katina” Sitzoukis née Tsalis from Litochoro



1 kg of mutton meat or beef

5 onions

1 leek

2 eggs + 1 for spreading

70 g of rice + 1 1/2 cups of the broth we have

boil the meat with the onions

14 sheets of crust

For spreading the leaves 1/2 fl olive oil +

30-40 g of butter for aroma

For the porridge

165 g of flour

40 g of sunflower oil

170 ml carbonated water

For the dough if we make our own sheet

750 gr. flour for sheet

330 g soda water at room temperature

120 g of water

1 tbsp salt

2 tbsp vinegar

3 tbsp oil

If you make your own sheets you won't need the porridge
