Sarakopites amazing Cretan cheese pies

  1. In a bowl, mix the flour with the salt and make a well in the center

  2. In the well place all the liquid ingredients of the dough and knead for 10 minutes.

  3. Cover with cling film and leave in the fridge overnight

  4. Place the filling ingredients in a bowl and mix

  5. Divide the dough into 4 and pieces and spread them into thin sheets

  6. Straighten the edges and cut each sheet into 4 strips

  7. Place the filling lengthwise in the center of the strip

  8. Twist into a snail shape

  9. Fry in olive oil

  10. Pour honey on top and sprinkle with sesame seeds


For the dough

500 g soft flour

250 ml water, lukewarm

    30 ml Tsikoudia

    10 ml of olive oil

    10 ml lemon juice

For the filling

300 g Xinomyzithra (soft sour cheese)

100 g Anthotiro

10-15 mint leaves, chopped

Olive oil for frying

Thyme honey and sesame for topping
