A french classic sauce


  1. In cold milk, add sugar, salt, nutmeg and smoked paprika.

  2. Once it warms up a bit I take it off the heat

  3. In another saucepan add the butter and let it melt over low heat.

  4. Add the flour, stirring constantly.

  5. When the smell of raw flour is gone,  it is ready.

  6. Add the warm milk and stir with the whisk.

  7. Once it starts to bubbling it is ready.


1 litre milk

160g clarified butter

160g plain flour

2gr smoked paprika

10g sugar

10g salt

2g nutmeg
