Mix the yeast and salt with the flour.
Place the water in a hole in the center of the flour and gradually mix it with the water.
Cover and leave in a warm place until it doubles in size.
Place it on a floured surface and start folding with a spatula. Spread it and bring one side to the center, on top of the other and spread again. Repeat 3 more times.
Turn on the oven at 220 degrees Celsius.
Shape it and place it in a floured bowl. Score the top of the dough to a depth of 2 cm. Cover and let them rest for 15 minutes .
Transfer it to the pan with a lid and bake for 38 minutes.
Carefully remove the lid and lower to 190 degrees where you bake the bread for another 10 minutes
Take it out and leave it on a griddle covered with a towel for 10 to 15 minutes.
