Bread without yeast and without kneading

Bread made like in the old day


  1. In a bowl place flour, yeast and lukewarm water

  2. Leave for 12 hours in the oven with the light on.

  3. The next day remove 140 g of yeast and place it in the fridge for the next kneading.

  4. Αdd to the bowl with the yeast all the ingredients for the bread and mix it.

  5. Place in the oven only with the light on for 1 hour.

  6. With a large spoon make some folds for 5 minutes.

  7. Place baking paper on the bottom of the dish that you will use and dust flour. Place the dough on top and put it in the oven for about 3 hours to rise.

  8. Dust some flour and carve the bread

  9. Leave it in the oven without turning it on for 30 minutes.

  10. Without opening the oven, turn on the oven at 200 degrees without the fan and bake 45 minutes.

  11. Remove the lid, and bake for another 20 minutes without the fan.

Prepare dough:

200 g all-purpose flour

200 g of lukewarm water

140 g of food

Day 2

400 g sourdough

550 g all-purpose flour

330 g of lukewarm water

12 g of olive oil

18 g salt
