Bretzel (Pretzel) rolls by little Elena

Seriously soft and tasty


  1. In a bowl add water, yeast and sugar and mix with the whisk

  2. Allow the yeast to activate for 4 to 5 minutes

  3. Add salt to the flour and mix

  4. Gradually add half the flour to the water, stirring

  5. Add the melted butter

  6. Continue with a little more flour until you have a nice thick liquid

  7. Place in the mixer and add the rest of the flour

  8. Mix for about 3 minutes

  9. Place the dough in an oiled bowl and let it rest for at least 40 minutes or until it doubles in size

  10. In a saucepan put the water and bicorbanate soda to boil

  11. Sprinkle with a little flour and place on a floured counter

  12. I fold a few times and divide into balls

  13. Shape the pretzels

  14. Preheat the oven to 180 with the fan

  15. Boil the pretzels (once or twice at a time) for 30 seconds

  16. Remove from the pot and place on a]baking sheet.

  17. Brush with egg and sprinkle some with coarse salt and some with grated cheese

  18. Bake for 8 minutes


For the dough

360ml warm water

2 tsp dried yeast

1Tbsp sugar

1tsp salt

50gr melted butter

580gr plain flour

For the blanching

2.5ltr water

150gr bicarbonate soda

For the topping

1 egg

coarse salt

grated cheese
