Seriously soft and tasty
Method
In a bowl add water, yeast and sugar and mix with the whisk
Allow the yeast to activate for 4 to 5 minutes
Add salt to the flour and mix
Gradually add half the flour to the water, stirring
Add the melted butter
Continue with a little more flour until you have a nice thick liquid
Place in the mixer and add the rest of the flour
Mix for about 3 minutes
Place the dough in an oiled bowl and let it rest for at least 40 minutes or until it doubles in size
In a saucepan put the water and bicorbanate soda to boil
Sprinkle with a little flour and place on a floured counter
I fold a few times and divide into balls
Shape the pretzels
Preheat the oven to 180 with the fan
Boil the pretzels (once or twice at a time) for 30 seconds
Remove from the pot and place on a]baking sheet.
Brush with egg and sprinkle some with coarse salt and some with grated cheese
Bake for 8 minutes

360ml warm water
2 tsp dried yeast
1Tbsp sugar
1tsp salt
50gr melted butter
580gr plain flour
For the blanching
2.5ltr water
150gr bicarbonate soda
For the topping
1 egg
coarse salt
grated cheese
