Cinnamon buns - Kanelbullar

  1. Place all the ingredients for the dough in the mixer bowl and mix for 10 minutes

  2. Cover and let it double in size.

  3. Mix the filling ingredients in the mixer.

  4. Spread the dough on a floured surface and spread the filling on it.

  5. Wrap in a roll and cut into strips, or follow the recipe

  6. Let them rest for 20 to 30 minutes

  7. Preheat the oven at 180 degrees in the air.

  8. Glaze with egg wash and bake for 15 minutes


For the dough

200gr full fat milk

2 medium eggs

620gr bread flour

25gr fresh yeast

50gr sugar

200gr soft unsalted butter

8gr salt

1tsp cadamon 

For the filling

150gr soft unsalted butter

250gr brown sugar

2Tsp cinnamon

egg and milk for the egg wash

For the syrup:

80gr water

80gr sugar
