A very special recipe from my friend Maria A. from Cyprus


  1. Grate the potatoes through the thin side of the grater

  2. Squeeze the grated potato to remove all its liquid

  3. Chop the onion and parsley

  4. Put all the ingredients in a bowl and knead well

  5. Cover and refrigerate overnight

  6. Shape the meatballs and fry them


For 1 kg minced pork

4 large potatoes (650g)

2 onions

2 slices of grated bread 50g (optional)

2 tbsp dry mint

3 eggs

1 small bunch of parsley

A little cinnamon

A little nutmeg

Salt and pepper
