Like pulled pork!
Method
Preheat the oven to 160°C
Mix the spices
Season the meat
Brush the meat with the mustard mixture
Pour the spice mixture on top
Chop the onions and apples and place them in the bottom of the pot
On top place the meat upside down bones facing down
Also sprinkle the underside with salt, mustard and the spices
Bake for at least 3 hours (core temperature 90°C, for those using a baking thermometer)
Roast without a lid for the last 20-30 minutes.
Then let the meat rest covered for 30 minutes.
Ingredients
Spice mix
2 tablespoons sweet paprika powder
1 teaspoon smoked paprika powder
1 teaspoon ginger powder
1 teaspoon onion seeds
1 teaspoon garlic cloves
pepper from the mill
1 teaspoon dried oregano
1 kg of thyme
1 teaspoon of thrombi
1 teaspoon coriander
1 teaspoon chili
15 g salt + 3 g smoked salt per kg of meat
3 kg bone-in pork neck
1 teaspoon mustard (optional)
1 teaspoon of honey
2 large onions + 2-3 apples, or quinces as a base
