Spanish omelette, Greek style by Grandpa Tassos

This is how to make your omelet special


  1. Peel and cut the potatoes into thin slices.

  2. Put olive oil in a non-stick deep frying pan and as soon as it heats up add in the potatoes.

  3. After 10 minutes add the onion.

  4. Once cooked the potatoes remove  them and drain the excess oil.

  5. Place the eggs with the salt in a bowl and beat them until fluffy.

  6. Add the potatoes, thyme and feta cheese.

  7. In a little oil in the pan and as soon as it heats up, add the omelette and leave it covered for about three minutes.

  8. Turn it over in a plate.

  9. Put some oil again in the pan and I place the omelette in the pan without a lid now, to cook the other side as well.



6 free range eggs

2 spring onions

800 g of unpeeled potatoes

1 TBSP. fresh thyme finely chopped

100 g feta cheese (optional)

Salt pepper

Olive oil for frying
