Tomato fritters from Evoia

An amazing summer meze

  Method  

  1. Grate the onion and salt it so it can extract its liquids

  2. Chop the tomatoes into 8, remove the seeds, squeeze them to remove the excess liquid

  3. and finely chop them

  4. Chop the green onions and add them to the tomato

  5. Squeeze the dry onion that you left aside and add it to the tomatoes

  6. Add all the other ingredients except the frying oil

  7. Mix them well and add flour until it becomes a solid porridge

  8. Pour the mixture into hot oil with a spoon

  9. Fry for about 4 minutes on each side

  Ingredients  

500 g Tomatoes

10 cherry tomatoes

1 medium dry onion

2 fresh onions

1-2 eggs

4 tbsp mint

1 tbsp dry thyme

3-4 sun-dried tomatoes

Salt and Pepper

½ tsp tomato paste

150-200 g of self-raising flour

3 tbsp. olive oil

Seed oil for frying
